Mini cheesecakes with wafers and strawberries



15 “Gastone Lago” Vanilla wafers

250 g cream cheese (room temperature)

1 egg

1 pinch of salt

50 g of granulated sugar

1 tbsp Vanilla extract

1 tsp lemon juice

12 strawberries

icing sugar


Pre-heated oven at 160°. Line a baking dish with wet baking paper. Place “Gastone Lago” Vanilla wafers well aligned. In a bowl whip the cream cheese and add sugar, vanilla, salt and lemon juice. Once the mixture is homogeneous add egg and combine well. Pour the cream over the wafer and spread evenly. Bake the cake for 25 minutes. Remove the cake from the oven and let it cool down and chill for at least 6 hours. Remove from refrigerator and transfer the cheesecake on a cutting board and cut into 12 squares. Cut the strawberries with many small cuts in order to form small fans and place each strawberry on a slice of cake. Dust with icing sugar and chill until ready to serve.
